Today was one of those foul mood days. Work is slow so there’s more time to hate the remaining winter and snow and cold. I threw my back out somehow so I have been walking kind of sideways and in pain most of the day. I tried to get some work done but nothing went right. Time for some kitchen therapy. I whipped up a triple batch of Mom’s Waffles. Enough to pass some along to the lady who invented this bliss (Mom herself) and freeze a whole bunch. And some to feast on chicken and waffles tonight (with the very necessary nutmeg) for supper. Mmmmmm. Recipe for waffle therapy below:

2 eggs separated, 1 1/3 cup milk, 1/3 cup oil, 3 Tbsp sugar, 2 cups sifted flour, 3 tsp baking powder, 1/2 tsp salt

Beat together egg yolks, milk and oil. Sift together flour, baking powder, salt and sugar. Add dry ingredients to liquids and mix just enough to blend. Beat egg whites until stiff in separate bowl then fold into batter. Pour into grids on waffle iron and follow manufacturer’s directions for timing. For oatmeal waffles (our favorite) substitute up to half of the flour with rolled oats.
